The Holiday Cocktail – The Method
WHere is an easy interpretation of a drink featured on our latest menu. It's a large-volume premix that's bursting with the essence of the Christmas time, rendering it perfect for hosting a festive gathering. Any leftover syrup for brunch beverages, puddings, or to make another batch of the drink.

Yields 10 guests
For the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Combine every components in a pot, heat until it reaches a gentle boil, stirring until the sugar dissolves. Then, remove from the heat and let it to cool completely. Pour to a sterilised bottle, close it keeping it in the refrigerator, it can be stored for up to four weeks.
To make Batch Mix: Combine every liquids into a sizeable container, let it rest for 60 minutes, then strain best through muslin, so it's perfectly clear.
When ready to serve: Pour 85ml of the premix to a mixing glass packed with ice, gently stirring carefully for about 60 seconds to chill. Pour into an frosted cocktail glass or similar, top with a few cranberries adding the final touch using a light spray with the mandarin essence over the top.
